INGREDIENTS
- 600 grams of boned, skinned salmon or king fish, cut into bite-size chunks
- 1/2 cup lime juice
- 2 medium tomatoes, finely chopped
- 1/2 red onion, finely chopped
- 1/2 cup coarsely chopped coriander
- 2 tablespoons extra-virgin olive oil
- 1 pickled jalapeño cut finely
- 1 chilli, cut finely
- 1 teaspoon salt
- Corn chips
PREPARATION
- Mix the fish, lime juice and salt in a glass bowl. Let it rest for about 30 minutes, stirring occasionally.
- Mix the remaining ingredients except corn chips in another bowl.
- Serve with corn chips and a DRIP Habanero Margarita Cocktail.
